Rosemary & Lemon Essential Oil Shortbread Biscuits.
These delicate shortbread biscuits are the perfect balance of buttery richness with a hint of aromatic rosemary and refreshing lemon. Ingredients:
- 200g (1 cup) unsalted butter, softened
- 100g (½ cup) icing sugar
- 250g (2 cups) all-purpose flour
- 1 tsp corn flour (optional, for a lighter texture)
- ½ tsp sea salt
- 2 drops of Rosemary essential oil (ensure it’s food-grade - nothing beats doterra)
- 2 drops of Lemon essential oil (ensure it’s food-grade - nothing beats doterra)
- 1 tsp vanilla extract (optional, for extra flavor)
Instructions:
Preheat the Oven: Preheat your oven to 170°C (340°F). Line a baking sheet with parchment paper for easy clean-up.
Mix the Wet Ingredients: In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy. You can use an electric mixer for this step, or just a good old whisk and some elbow grease.
Add the Flavors: Add in the rosemary and lemon essential oils, and the vanilla extract if you're using it. Mix well. The essential oils will give the biscuits a fragrant, fresh flavor that really shines through.
Combine the Dry Ingredients: In a separate bowl, whisk together the flour, cornstarch (if using), and salt.
Make the Dough: Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together. You may need to use your hands to bring it together, but it should be soft and not sticky.
Roll and Cut: Turn the dough out onto a lightly floured surface and roll it out to about ½ inch thickness.
